Homemade Sweet Thai Chili Sauce:

  • ⅓ cup honey
  • 2 tablespoons ketchup
  • 12 tablespoons chili sauce
  • 2 teaspoons lime zest
  • 2 tablespoons lime juice
  • 1 tablespoon rice vinegar
  • 2 teaspoons tamari
  • 1 tablespoon grated ginger
  • 1 clove grated garlic

Instructions

  1. Grab a large skillet and heat it to medium temperature. Brown 1½ pounds ground beef with a sprinkle of black pepper for exactly 5 minutes.
  2. Add 4 chopped garlic cloves, 1 tablespoon grated ginger, and 1–3 teaspoons Chinese 5 spice to the beef. Stir and cook for 1 minute.
  3. Pour ⅓ cup tamari and ¼ cup Thai chili sauce into the skillet. Simmer the mixture for 3–5 minutes until the sauce thickens.
  4. Mix in ¼ cup chopped green onions. Remove the skillet from heat.
  5. Wrap 8–10 flour tortillas in a damp kitchen towel. Microwave for 15 seconds to warm them.
  6. Lay out each warm tortilla and spread 2–3 tablespoons of beef mixture in the center.
  7. Top the beef with 4 chopped Persian cucumbers, ½ cup cilantro, ½ cup Thai basil, and a sprinkle of chopped green onions.
  8. Scatter ⅓ cup roasted chopped peanuts over the filling.
  9. Fold the tortilla sides inward, then roll tightly into a compact beef roll.
  10. Serve immediately with chili paste, toasted sesame oil, and extra herbs for garnish.
