Instructions

  1. Blend ripe mango, 60 ml (¼ cup) low-sodium soy sauce, 30 ml (2 tablespoons) honey, 2 minced garlic cloves, 1 teaspoon grated ginger, 15 ml (1 tablespoon) rice vinegar, and 15 ml (1 tablespoon) sesame oil in a blender until smooth. Taste and adjust seasoning as needed.
  2. Pat 680 grams (1 ½ lbs) chicken thighs dry with paper towels. Sprinkle with a pinch of salt. Heat 15 ml (1 tablespoon) olive oil in a large skillet over 190°C (medium-high) heat.
  3. Sear chicken for 3-4 minutes per side until golden brown. Your goal is a beautiful caramelized exterior, not complete cooking.
  4. Pour entire mango glaze over chicken. Reduce heat to 160°C (medium) and simmer for 10-12 minutes. Turn chicken occasionally to ensure even coating.
  5. Mix 1 teaspoon cornstarch with 15 ml (1 tablespoon) water to create a slurry. Stir into the sauce and cook for 2-3 minutes until the glaze thickens and clings to the chicken.
  6. Garnish with sesame seeds and chopped green onions. Serve immediately while the glaze is glossy and warm.
