Instructions
- Soak 1 cup dried djon djon mushrooms in 3 cups water (750 ml). Bring liquid to a rolling boil over high heat, then reduce to medium-low. Simmer for precisely 12 minutes.
- Let mushroom mixture rest off heat for 10 minutes. Carefully strain broth through a fine mesh strainer, capturing deep brown liquid while separating solids.
- Finely dice 1 small onion and 1 bell pepper. Mince 2 garlic cloves with sharp precision. Your ingredients should look uniform and delicate.
- Warm 2 tablespoons vegetable oil in a heavy-bottomed pot over medium heat for 45 seconds. Add prepared vegetables, sautéing for exactly 3 minutes until edges become translucent.
- Crush 1 Maggi cube into powder. Sprinkle 1 teaspoon dried thyme into the pot. Stir aromatics continuously for 45 seconds to release fragrant oils.
- Pour 2 cups long-grain white rice (400 g) into the pot. Stir thoroughly to coat each grain with seasoned oil. Cook for 1 minute.
- Add reserved mushroom broth. Season with ½ teaspoon salt and ¼ teaspoon ground black pepper. Mix gently but completely.
- Increase heat to high until liquid reaches full boil. Immediately reduce to lowest setting, cover tightly with lid.
- Cook rice at 200°F (93°C) for 18 minutes without lifting lid. Your goal is perfectly steamed, separated grains.
- Optional: Fold 1 cup mixed vegetables into rice during final 5 minutes. Dot with 1 tablespoon butter if desired.
