Scale
Main Ingredients:
- 20 oz beef steak
- 11 oz bell peppers
- 4 oz onion
- 1.4 oz green onions
Supporting Ingredients:
- ¼ cup vegetable oil
- 3 Tbsp hoisin sauce
- 2 Tbsp soy sauce
- 2 Tbsp rice vinegar
- 1 Tbsp sesame oil
- 1 Tbsp brown sugar
- 1 Tbsp cornstarch
- 1 Tbsp water
Seasoning and Aromatics:
- 0.3 oz garlic
- 0.2 oz ginger
- 1 tsp cornstarch
- ½ tsp baking soda
- ½ tsp sea salt
- sesame seeds to taste
Instructions
- Slice 20 oz beef steak into ¼-inch thin strips against the grain, ensuring even cuts for quick cooking.
- Combine 1 Tbsp sesame oil, 1 tsp cornstarch, ½ tsp baking soda, and ½ tsp sea salt with beef strips. Massage thoroughly and let marinate for 15-30 minutes.
- Whisk 3 Tbsp hoisin sauce, 2 Tbsp soy sauce, 2 Tbsp rice vinegar, and 1 Tbsp brown sugar in a separate bowl for the sauce.
- Create a cornstarch slurry by mixing 1 Tbsp cornstarch with 1 Tbsp water in a small bowl.
- Chop 11 oz bell peppers and 4 oz onions into uniform strips, removing seeds and membranes.
- Mince 2 garlic cloves and ½ Tbsp ginger.
- Heat ⅓ of vegetable oil in a wok at medium-high heat until shimmering.
- Sear beef strips for 2-3 minutes per side without moving, creating a golden crust.
- Add another ⅓ of oil and stir-fry peppers and onions for 2-3 minutes until crisp-tender.
- Reduce heat to medium and sauté garlic and ginger for 1-2 minutes.
- Pour sauce and cornstarch slurry into the pan, stirring constantly for 1-2 minutes until glossy and thickened.
- Return beef to the pan, toss with green onions, and serve hot with optional sesame seeds sprinkled on top.
Notes
- Freezing the beef helps achieve super-thin, even slices for tender stir-fry meat that cooks quickly and evenly.
- Marinating beef with baking soda and cornstarch creates a velvety texture and helps prevent toughness during high-heat cooking.
- Cut vegetables into uniform sizes to ensure even cooking and maintain that perfect crisp-tender texture in your stir-fry.
- For a gluten-free version, swap regular soy sauce with tamari and use cornstarch instead of flour-based thickeners.
