Instructions

  2. Coat each chicken breast in ¼ cup all-purpose flour, tapping off excess. Ensure complete but light coverage.
  3. Heat ¼ cup olive oil in a 12-inch skillet at medium-high heat (375°F). Carefully place floured chicken into hot oil.
  4. Sear chicken for exactly 4 minutes until golden brown. Flip and cook opposite side for additional 4 minutes. Remove chicken to clean plate.
  5. Reduce skillet heat to medium. Add 2 minced garlic cloves and 1 cup sliced mushrooms. Sauté for 3 minutes until mushrooms soften.
  6. Pour ½ cup Marsala wine and ½ cup chicken broth into skillet. Scrape pan bottom to release browned bits. Simmer sauce for 6 minutes.
  7. Stir ¼ cup heavy cream into sauce. Return chicken to skillet and cook for 2 minutes until sauce thickens and chicken warms.
  8. Transfer chicken to serving platter. Spoon mushroom sauce generously over each piece. Sprinkle 2 tablespoons fresh chopped parsley on top.
