  3. Flip beef strips and stir-fry for another 90 seconds until golden brown and medium-rare. Transfer meat to a clean plate, keeping the pan’s delicious fond intact.
  4. Pour remaining 1 tablespoon oil into the same pan. Toss in thick-cut wedges from 1 large red onion, cooking at medium-high heat for 2 minutes until edges start caramelizing.
