Instructions
- Dice the small yellow onion and sauté in 1 tablespoon vegetable oil over medium heat for 5 minutes until translucent and soft.

- Cook the eggs until they are just set with no liquid remaining, seasoning with ½ teaspoon sea salt and ¼ teaspoon black pepper.
- Roll each biscuit dough piece into a round about 3 mm thick on a floured surface.
- Spoon a portion of egg mixture into the center of each dough round, leaving clear edges.

- Place hand pies in a single layer with space between them, misting tops lightly with spray.
- Air fry at 360°F (180°C) for 5 minutes.

- Air fry for 1 final minute to set the butter’s flavors.
Notes
- Check the temperature of your air fryer, as models can vary slightly and affect cooking time.
- Make sure eggs are scrambled softly and not overcooked before filling the hand pies to prevent dryness.
- Use pre-cooked bacon for easier crumbling and consistent texture throughout the hand pies.
- When sealing the dough, press edges firmly with a fork to prevent filling from leaking during cooking.
