Ingredients

Scale

Main Proteins:

  • 6 oz thinly sliced steak
  • 2 large eggs
  • 2 slices cheese

Bread and Base:

  • 2 bagels
  • 1 tbsp butter (for toasting bagels)

Seasonings and Extras:

  • ½ tsp salt (for steak)
  • ½ tsp black pepper (for steak)
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp butter or olive oil (for cooking steak)
  • 1 tbsp milk
  • ½ tsp salt (for eggs)
  • ½ tsp black pepper (for eggs)
  • 1 tbsp butter (for cooking eggs)
  • 1 tbsp mayonnaise

Instructions

  1. Heat 1 tbsp butter or olive oil in a skillet at 400°F over medium-high heat until shimmering.
  2. Sprinkle 6 oz steak with ½ tsp salt, ½ tsp black pepper, ½ tsp garlic powder, and ½ tsp onion powder on both sides.
  3. Sear steak for 2-3 minutes per side until deeply browned and cooked to medium-rare. Transfer to a cutting board.
  4. Whisk 2 large eggs with 1 tbsp milk, ½ tsp salt, and ½ tsp black pepper in a small bowl until fully combined.
  5. Melt 1 tbsp butter in the same skillet at 325°F over medium heat.
  6. Pour whisked eggs into the pan and gently scramble for 2 minutes until soft and fluffy. Remove from heat.
  7. Slice 2 bagels horizontally and spread 1 tbsp butter evenly across cut surfaces.
  8. Toast bagel halves for 1-2 minutes at 375°F until golden and crispy edges form.
  9. Optional: Spread 1 tbsp mayonnaise on bottom bagel half.
  10. Layer sliced steak across bottom bagel half.
  11. Spoon scrambled eggs directly over steak.
  12. Place 1 slice of cheese on hot eggs so it slightly melts.
  13. Cap with top bagel half and press gently to compress sandwich.
  14. Return sandwich to skillet at 250°F for 1 minute to fully melt cheese.

Notes

  • Seasoning the steak generously with spices ensures a flavorful base for your sandwich.
  • Let the steak rest for a few minutes after cooking to keep the meat juicy and tender.
  • Whisk eggs gently and remove from heat while still slightly wet to prevent overcooking and achieve a creamy texture.
  • For a lighter version, use whole wheat bagels and swap regular cheese for a low-fat alternative.
