Instructions

  1. Pat both 2-inch thick ribeye steaks completely dry using paper towels. Season generously with 1 tablespoon cajun seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper on each side.
  2. Dice 1 bell pepper and ½ onion into small, uniform ¼-inch pieces. Mince 2 garlic cloves finely.
  3. Heat 2 tablespoons olive oil in a large cast-iron skillet over medium-high heat for 2 minutes until oil shimmers and surface looks wavy.
  4. Carefully place seasoned steaks into hot skillet. Sear for exactly 3-4 minutes per side to develop a dark golden crust, reaching 130-135°F for medium-rare.
  5. Transfer steaks to a clean plate, leaving all browned bits in the skillet.
  6. Drop diced vegetables into the same skillet. Sauté for 2-3 minutes until they turn slightly translucent and soft.
  7. Add 1 cup long-grain white rice and remaining 1 tablespoon cajun seasoning to skillet. Stir for 30 seconds to coat rice with seasonings.
  8. Pour 2 ½ cups chicken broth into skillet. Sprinkle 1 packet ranch seasoning mix over surface.
