Instructions

  1. Set up a sheet of parchment paper on a flat plate for cooling the caramel walnuts. Place this surface nearby your cooking area.
  2. Combine 1 cup walnuts, ¼ cup + 1 tbsp light brown sugar, ¼ cup water, 1 tbsp butter, and a dash of salt in a medium non-stick pan.
  3. Heat the pan on high for 5 minutes, stirring occasionally. During the final minute, stir more consistently and reduce heat to medium.
  4. Watch for the mixture to transform from watery to glossy. Your nuts should look coated and shiny with caramel.
  5. Remove from heat when all liquid has completely evaporated. The nuts should feel sticky and completely coated.
  6. Quickly spread the hot caramel walnuts on the parchment paper in a single layer. Ensure they are not clumped together.
  7. While still hot, sprinkle your two extra pinches of salt across the nuts to enhance their sweet-salty profile.
  8. Allow the caramel walnuts to cool completely at room temperature. Once cool, break apart any clusters that have formed.
  9. Transfer the cooled caramel walnuts to an airtight container. They will stay fresh for several days at room temperature.
