- Grate ½ cucumber and squeeze out excess moisture using a clean kitchen towel. Mix with 1 cup Greek yogurt, 1 minced garlic clove, 1 tablespoon lemon juice, 1 tablespoon chopped fresh dill, and salt.
- Warm 4 pita pockets in a skillet or microwave for 15-20 seconds until soft and pliable.
- Fill each pita pocket with the seasoned beef mixture. Sprinkle ¼ cup shredded mozzarella or cheddar cheese inside.
- Place stuffed pitas in a skillet or under the broiler for 1-2 minutes at 400°F to melt the cheese.
