Instructions

  2. Melt 2 tablespoons butter in a 12-inch skillet over medium heat at 350°F. Add potatoes and cook 6 minutes, stirring occasionally until golden brown.
  3. If desired, add ½ cup chopped ham or bacon to the skillet. Cook 3 minutes until heated through and slightly crispy.
  4. Crack 4 large eggs into a mixing bowl. Pour in ½ cup milk and add a pinch of salt and pepper. Whisk until fully combined and slightly frothy.
  5. Pour egg mixture over potatoes in the skillet. Gently stir to distribute eggs evenly. Cook 4-5 minutes, stirring periodically to create soft scrambled texture.
  6. Sprinkle 1 cup shredded cheddar cheese across the top of the egg and potato mixture. Cover skillet with lid for 2 minutes at low heat until cheese completely melts.
