Ingredients
Scale
Main Ingredients:
- 4 large eggs
- 4 medium potatoes, diced
- 1 cup shredded cheddar cheese
Supporting Ingredients:
- ½ cup milk
- ½ cup cooked ham or bacon, chopped
Seasonings and Garnishes:
- ¼ cup green onions or chives, chopped
- 2 tablespoons butter
- Salt and pepper to taste
Instructions
- Fill a 4-quart pot with salted water. Boil 4 diced medium potatoes at 212°F for 12 minutes until fork-tender. Drain completely.
- Melt 2 tablespoons butter in a 12-inch skillet over medium heat at 350°F. Add potatoes and cook 6 minutes, stirring occasionally until golden brown.
- If desired, add ½ cup chopped ham or bacon to the skillet. Cook 3 minutes until heated through and slightly crispy.
- Crack 4 large eggs into a mixing bowl. Pour in ½ cup milk and add a pinch of salt and pepper. Whisk until fully combined and slightly frothy.
- Pour egg mixture over potatoes in the skillet. Gently stir to distribute eggs evenly. Cook 4-5 minutes, stirring periodically to create soft scrambled texture.
- Sprinkle 1 cup shredded cheddar cheese across the top of the egg and potato mixture. Cover skillet with lid for 2 minutes at low heat until cheese completely melts.
- Turn off heat. Garnish with ¼ cup chopped green onions. Serve immediately while warm and cheese is still gooey.
Notes
- Parboil potatoes just until tender to prevent them from becoming mushy when crisping in the skillet.
- Whisk eggs thoroughly to create a smooth, even texture that blends beautifully with the crispy potatoes.
- For a protein boost, swap ham or bacon with diced chicken or turkey sausage to keep the dish lean.
- Use a cast-iron skillet for the best golden-brown potato crust and even heat distribution.
