Instructions

  1. Combine 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon sesame oil, 1 tablespoon rice vinegar, and 1 tablespoon honey in a small bowl. Whisk until smooth.
  2. Heat 1 tablespoon vegetable oil in a large skillet at 375°F. Cut 1 lb chicken into bite-sized pieces and cook for 5-7 minutes until golden brown.
  3. Transfer cooked chicken to a clean plate and set aside.
  4. Add remaining 1 tablespoon vegetable oil to the same skillet. Drop in 2 minced garlic cloves and 1 teaspoon fresh ginger. Sauté for 30 seconds until aromatic.
  5. Slice 2 medium zucchini into thin rounds. Add to skillet and stir-fry for 3-4 minutes until crisp-tender.
  6. Return chicken to the pan. Pour prepared sauce over the mixture and toss for 2-3 minutes until everything is heated and sauce slightly thickens.
  7. Plate your stir-fry over steamed rice. Sprinkle with sesame seeds and chopped green onions as a fresh garnish.
