Ingredients

Scale

Main Ingredients:

  • 1 lb flank steak or sirloin, thinly sliced against the grain
  • 1 red bell pepper
  • 1 green bell pepper
  • 1 large onion

Seasoning and Marinade Ingredients:

  • 3 tablespoons soy sauce
  • 2 tablespoons vegetable oil
  • 3 garlic cloves
  • 1 teaspoon fresh ginger
  • 2 tablespoons cornstarch

Sauce Ingredients:

  • ½ cup beef broth or water
  • 2 tablespoons oyster sauce
  • 1 tablespoon hoisin sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon brown sugar
  • 1 teaspoon black pepper
  • 1 teaspoon sesame oil

Instructions

  1. Slice 1 lb flank steak super thin against the grain. Mix with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Let meat marinate at room temperature for 15 minutes.
  2. Prepare sauce by whisking ¼ cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, ½ cup beef broth, 1 teaspoon black pepper, and 1 teaspoon sesame oil in a separate bowl.
  3. Heat 1 tablespoon vegetable oil in a wok at 425°F. Sear marinated beef for exactly 90 seconds per side until edges turn crispy. Transfer meat to a clean plate.
  4. In the same wok, add remaining oil with 3 minced garlic cloves and 1 teaspoon ginger. Sauté for 30 seconds until fragrant.
  5. Toss in 1 red bell pepper and 1 green bell pepper sliced into strips. Add 1 large onion cut into wedges. Stir-fry at high heat for 3 minutes until vegetables remain slightly crisp.
  6. Return seared beef to the wok. Pour prepared sauce over meat and vegetables. Simmer for 2 minutes, stirring constantly.
  7. Mix 1 teaspoon cornstarch with 1 tablespoon water to create a slurry. Stir into the wok to thicken sauce for another 45 seconds.
  8. Remove from heat and serve immediately over steamed rice or noodles.

Notes

  • Choose a tender cut like sirloin or flank steak for the most flavorful and tender pepper steak.
  • Slice the beef against the grain when it’s slightly frozen to get super thin, even cuts that cook quickly and stay tender.
  • Let the marinated beef come to room temperature before cooking to ensure even searing and prevent tough meat.
  • If making this for someone with gluten restrictions, swap regular soy sauce for tamari or coconut aminos to keep the dish gluten-free.
