Instructions
- Slice 1 lb flank steak super thin against the grain. Mix with 2 tablespoons soy sauce and 1 tablespoon cornstarch. Let meat marinate at room temperature for 15 minutes.
- Prepare sauce by whisking ¼ cup soy sauce, 2 tablespoons oyster sauce, 1 tablespoon hoisin sauce, 1 tablespoon rice vinegar, 1 tablespoon brown sugar, ½ cup beef broth, 1 teaspoon black pepper, and 1 teaspoon sesame oil in a separate bowl.
- Heat 1 tablespoon vegetable oil in a wok at 425°F. Sear marinated beef for exactly 90 seconds per side until edges turn crispy. Transfer meat to a clean plate.
- In the same wok, add remaining oil with 3 minced garlic cloves and 1 teaspoon ginger. Sauté for 30 seconds until fragrant.
- Toss in 1 red bell pepper and 1 green bell pepper sliced into strips. Add 1 large onion cut into wedges. Stir-fry at high heat for 3 minutes until vegetables remain slightly crisp.
- Return seared beef to the wok. Pour prepared sauce over meat and vegetables. Simmer for 2 minutes, stirring constantly.
- Mix 1 teaspoon cornstarch with 1 tablespoon water to create a slurry. Stir into the wok to thicken sauce for another 45 seconds.
- Remove from heat and serve immediately over steamed rice or noodles.
