Instructions

  1. Pour ¼ cup soy sauce and 1 teaspoon cumin over 1 lb ground beef in a mixing bowl. Let the meat absorb flavors for 10 minutes at room temperature.
  2. Slice 2 medium bell peppers and 1 medium onion into thin strips. Mince 3 garlic cloves with a sharp knife.
  3. Heat 2 tablespoons olive oil in a large skillet at medium-high heat for 2 minutes until oil shimmers.
  4. Add marinated ground beef to the hot skillet. Cook for 6-7 minutes, breaking meat into small crumbles until brown and no pink remains.
  5. Move browned beef to one side of the skillet. Add sliced onions and bell peppers to the empty space. Saute vegetables for 5-6 minutes until edges turn slightly crispy.
  6. Stir minced garlic into the vegetables. Cook for an additional 1 minute until fragrant.
  7. Drain 1 can of black beans and add them to the skillet. Sprinkle remaining cumin, salt, and pepper over the mixture.
  8. Combine all ingredients in the skillet, stirring gently for 2-3 minutes until beans are heated through.
  9. Serve the colorful stir-fry over fluffy rice. Scatter ¼ cup fresh chopped cilantro on top as a bright garnish.
