Main Protein:
- 1 lb ground beef
Vegetables:
- 2 medium bell peppers, sliced
- 1 medium onion, sliced
- 3 cloves garlic, minced
Starches and Legumes:
- 1 cup rice (uncooked)
- 1 can (15 oz) black beans, drained and rinsed
Seasonings and Liquids:
- ¼ cup soy sauce
- 1 teaspoon cumin
- ¼ cup fresh cilantro, chopped
- 2 tablespoons olive oil
- Salt to taste
- Pepper to taste
Instructions
- Pour ¼ cup soy sauce and 1 teaspoon cumin over 1 lb ground beef in a mixing bowl. Let the meat absorb flavors for 10 minutes at room temperature.
- Slice 2 medium bell peppers and 1 medium onion into thin strips. Mince 3 garlic cloves with a sharp knife.
- Heat 2 tablespoons olive oil in a large skillet at medium-high heat for 2 minutes until oil shimmers.
- Add marinated ground beef to the hot skillet. Cook for 6-7 minutes, breaking meat into small crumbles until brown and no pink remains.
- Move browned beef to one side of the skillet. Add sliced onions and bell peppers to the empty space. Saute vegetables for 5-6 minutes until edges turn slightly crispy.
- Stir minced garlic into the vegetables. Cook for an additional 1 minute until fragrant.
- Drain 1 can of black beans and add them to the skillet. Sprinkle remaining cumin, salt, and pepper over the mixture.
- Combine all ingredients in the skillet, stirring gently for 2-3 minutes until beans are heated through.
- Serve the colorful stir-fry over fluffy rice. Scatter ¼ cup fresh chopped cilantro on top as a bright garnish.
Notes
- Cut bell peppers into uniform strips for even cooking and a professional-looking dish.
- Drain excess fat from ground beef after browning to keep the stir-fry from becoming greasy.
- For a low-carb version, replace rice with cauliflower rice or serve over zucchini noodles.
- Toast cumin in the pan for 30 seconds before adding other ingredients to enhance its nutty flavor and aroma.
