Ingredients
Scale
Main Ingredients:
- 6 ears corn kernels
- 4 slices bacon
Dairy and Fat:
- ¼ cup butter
Seasonings:
- Freshly ground black pepper
- Salt
Garnish:
- Fresh parsley or chives
Instructions
- Slice kernels from 6 ears of corn on a cutting board using a sharp knife. Capture any escaping corn milk for extra flavor.
- Place a large skillet over medium heat. Dice 4 bacon slices into small pieces.
- Cook bacon in the skillet for 5-7 minutes until crispy and golden brown. Move bacon to a paper towel-lined plate, keeping fat in the pan.
- Drop ¼ cup butter into the hot skillet. Let it melt completely and coat the bottom.
- Add corn kernels and collected corn milk to the melted butter. Stir gently to ensure even coating.
- Return crispy bacon pieces back to the skillet with the corn. Mix thoroughly.
- Sprinkle freshly ground black pepper across the mixture. Taste before adding salt, as bacon provides natural seasoning.
- Simmer the corn and bacon for 10-15 minutes over medium heat. Stir occasionally to prevent sticking and ensure even cooking.
- Remove skillet from heat when corn becomes tender and develops a light golden color.
- Transfer the corn and bacon to a serving dish. Optionally garnish with fresh herbs before serving warm.
Notes
- Fresh corn kernels come off the cob easily when you hold the ear vertically and slice downward with a sharp knife.
- Save every drop of corn milk when cutting kernels, as it adds incredible sweet richness to the final dish.
- Crisp the bacon slowly and evenly to render maximum fat, which creates the perfect cooking base for corn.
- For a lighter version, substitute turkey bacon and reduce butter to create a healthier yet equally delicious skillet corn.
