Description

White chicken chili brings warmth and comfort to your dinner table with tender chicken, creamy beans, and a perfectly spiced broth that feels like a hug from grandma. Simmering this classic comfort meal takes just minutes, making it a go-to recipe for busy weeknight dinners that everyone will devour.

Ingredients

Scale

Main Proteins:

  • 1 lb boneless, skinless chicken breasts, cubed

Vegetables and Aromatics:

  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 cans (4 oz each) chopped green chilies

Liquid and Beans:

  • 2 cans (15 oz each) great northern beans, drained and rinsed
  • 1 can (14.5 oz) chicken broth
  • 1 cup sour cream
  • ½ cup heavy whipping cream

Spices and Seasonings:

  • 1 tsp salt
  • 1 tsp ground cumin
  • 1 tsp dried oregano
  • ½ tsp black pepper
  • ¼ tsp cayenne pepper

Garnishes:

  • Monterey Jack cheese
  • Fresh cilantro

Instructions

  1. Chop 1 lb boneless chicken breasts into cubes, dice 1 medium onion, and mince 2 garlic cloves while preheating a large pot over medium heat (375°F).
  2. Sauté chicken cubes, onion, and garlic in the pot for 6-8 minutes, stirring frequently until chicken turns completely opaque and loses its pink color.
  3. Pour 2 cans (15 oz) of drained great northern beans, 1 can (14.5 oz) chicken broth, and 2 cans (4 oz) chopped green chilies into the pot.
  4. Add 1 tsp each of salt, ground cumin, and dried oregano, plus ½ tsp black pepper and ¼ tsp cayenne pepper to the mixture.
  5. Increase heat to high and bring the entire mixture to a rolling boil, which should take about 4-5 minutes.
  6. Reduce heat to low, then simmer uncovered for exactly 30 minutes, allowing the flavors to meld and the liquid to slightly reduce.
  7. Remove pot from heat and immediately stir in 1 cup sour cream and ½ cup heavy whipping cream until completely incorporated.
  8. Ladle the chili into serving bowls and top with shredded Monterey Jack cheese and fresh cilantro if you prefer extra garnish.

Notes

  • Swap chicken breasts for thighs if you prefer a richer, more tender meat that stays moist during cooking.
  • For a lighter version, replace heavy whipping cream with half-and-half or milk, and use low-fat sour cream.
  • Customize heat levels by choosing mild, medium, or hot green chilies based on your spice tolerance.
  • Make this dish gluten-free by ensuring your broth and spices are certified gluten-free, which works perfectly for sensitive diners.
