Ingredients

Scale

Main Ingredients:

  • 4 salmon fillets
  • 1 ½ cups chicken broth
  • ¾ cup heavy cream
  • ½ cup Parmesan cheese
  • ½ cup sun-dried tomatoes

Supporting Ingredients:

  • 3 tablespoons butter
  • 2 tablespoons olive oil
  • 3 tablespoons flour
  • 2 teaspoons garlic
  • 2 teaspoons dried Italian seasoning
  • 1 teaspoon dried Italian seasoning
  • 1 teaspoon lemon zest

Seasoning Ingredients:

  • ½ teaspoon kosher salt
  • ¼ teaspoon cracked black pepper
  • Fresh basil

Instructions

  1. Pat 4 salmon fillets dry and coat with 1 tablespoon olive oil. Sprinkle each fillet with 2 teaspoons dried Italian seasoning, ½ teaspoon salt, and ¼ teaspoon black pepper.
  2. Heat 1 tablespoon olive oil in a large skillet over medium-high heat at 375°F. Cook salmon for 3 minutes per side until golden brown.
  3. Reduce skillet heat to medium-low and continue cooking salmon until internal temperature reaches 145°F, about 2-3 minutes more.
  4. Transfer salmon to a plate and set aside. Keep the skillet ready for sauce preparation.
  5. Melt 3 tablespoons butter in the same skillet over medium heat at 300°F. Add 2 teaspoons minced garlic and sauté for 30 seconds until fragrant.
  6. Sprinkle 3 tablespoons flour into the butter and garlic, stirring to create a smooth paste.
  7. Gradually whisk 1 ½ cups chicken broth into the mixture. Allow sauce to simmer and slightly thicken.
  8. Pour ¾ cup heavy cream and ½ cup Parmesan cheese into the skillet. Whisk continuously until sauce becomes creamy and smooth.
  9. Stir in ½ cup chopped sun-dried tomatoes, 1 teaspoon dried Italian seasoning, and 1 teaspoon lemon zest.
  10. Gently place salmon fillets back into the sauce. Simmer on low heat for 10 minutes to blend flavors.
  11. Garnish with fresh basil leaves before serving over pasta, rice, or your favorite vegetables.

Notes

  • Always choose fresh salmon with bright, firm flesh for the best flavor and texture.
  • Pat the salmon dry before seasoning to ensure a crisp, golden-brown exterior when searing.
  • Use freshly grated Parmesan cheese for a richer, more authentic taste in the creamy sauce.
  • For a lighter version, substitute half-and-half for heavy cream and use less butter when making the sauce.
