Ingredients
Scale
Main Ingredients:
- 4 salmon fillets
- 3 cups baby spinach
- 1 cup sun-dried tomatoes
- 1 cup heavy cream
Seasoning and Aromatics:
- 5 cloves garlic
- 1 teaspoon Italian seasoning
- Salt and pepper
Cooking Ingredients:
- 2 tablespoons olive oil
- 2 tablespoons butter
- ½ cup chicken broth
- ½ cup grated Parmesan cheese
- 1 tablespoon chopped fresh parsley
Instructions
- Season salmon fillets generously with salt and pepper on both sides.
- Heat 2 tablespoons olive oil in a large skillet at medium-high heat (375°F). Sear salmon for 5 minutes per side until golden brown.
- Transfer salmon to a separate plate and keep warm.
- Reduce skillet heat to medium and melt 2 tablespoons butter. Add 5 minced garlic cloves and sauté for 30-45 seconds until aromatic.
- Pour 1 cup heavy cream and ½ cup chicken broth into the skillet. Whisk ingredients together smoothly.
- Sprinkle ½ cup Parmesan cheese into the liquid. Stir continuously until cheese completely dissolves.
- Fold 1 cup chopped sun-dried tomatoes and 1 teaspoon Italian seasoning into the sauce. Mix thoroughly.
- Add 3 cups baby spinach and cook for 1-2 minutes until leaves wilt and reduce in volume.
- Carefully nestle salmon fillets back into the skillet. Spoon sauce over fish and heat for 3-4 minutes.
- Remove from heat and garnish with 1 tablespoon freshly chopped parsley before serving immediately.
Notes
- Fresh salmon fillets work best when they’re at room temperature before cooking, helping them cook evenly and stay tender.
- Pat the salmon completely dry with paper towels to ensure a beautiful golden-brown crust when searing.
- For a lower-carb version, swap heavy cream with coconut cream and use ghee instead of butter to make the dish dairy-free.
- When adding spinach, add it at the very last moment to keep its bright green color and prevent overcooking, which can make it turn mushy and lose nutrients.
