Instructions

  1. Slice 2 large chicken breasts horizontally into 4 thin cutlets. Season both sides generously with salt, pepper, and 1 teaspoon Italian seasoning.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat. Sear chicken cutlets for 4-5 minutes per side until golden and fully cooked. Remove chicken and set aside.

  4. Pour ¾ cup chicken broth into the skillet. Use a wooden spoon to scrape up all browned flavor bits from pan bottom.
  5. Mix in ¾ cup heavy cream, ½ cup grated Parmesan, ½ cup chopped sun-dried tomatoes, and 1 teaspoon dried thyme. Simmer sauce for 3-4 minutes until it slightly thickens.
  6. Return chicken to skillet. Coat each cutlet with sauce and warm for 2 additional minutes.
