Description

Peri Peri Chicken Delight brings fiery Portuguese-inspired flavors that dance across your taste buds with zesty spice and creamy texture. Garlic rice serves as the perfect partner, creating a meal that turns your dinner table into a celebration of bold, satisfying comfort.

Ingredients

Scale

Proteins:

  • 4 boneless, skinless chicken thighs or breasts

Seasonings and Sauces:

  • 23 tablespoons peri-peri sauce
  • 3 cloves garlic
  • Salt and pepper to taste
  • Juice of ½ lemon

Cooking Ingredients:

  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • ½ cup heavy cream
  • Optional: chopped parsley or chili flakes

Rice:

  • 1 cup long-grain white rice
  • 1 tablespoon butter
  • 2 cloves garlic
  • 2 cups chicken broth or water
  • Salt to taste

Instructions

  1. Combine 2-3 tablespoons peri-peri sauce, 3 minced garlic cloves, lemon juice, salt, and pepper in a mixing bowl. Thoroughly coat your 4 chicken thighs or breasts, ensuring each piece is well covered.
  2. Allow chicken to marinate at room temperature for 30 minutes, letting flavors deeply penetrate the meat.
  3. Place 1 tablespoon butter in a medium pot over medium heat. Sauté 2 minced garlic cloves for 45-60 seconds until fragrant.
  4. Add 1 cup long-grain white rice to the pot. Toast grains for 1-2 minutes, stirring constantly to prevent burning.
  5. Pour 2 cups chicken broth into the rice pot. Sprinkle salt to taste. Bring liquid to a rolling boil, then reduce heat to low.
  6. Cover rice pot and simmer for 15-18 minutes until liquid is absorbed and grains are tender and fluffy.
  7. Heat 1 tablespoon olive oil and 1 tablespoon butter in a large skillet over medium-high heat at 375°F.
  8. Carefully place marinated chicken in hot skillet. Sear for 4-5 minutes per side until internal temperature reaches 165°F.
  9. Remove chicken from skillet and set aside on a clean plate. Keep warm.
  10. Pour remaining marinade into the same skillet. Simmer for 1-2 minutes to reduce and eliminate raw chicken bacteria.
  11. Stir ½ cup heavy cream into the pan. Gently simmer sauce for 2-3 minutes until slightly thickened.
  12. Return chicken to skillet, coating each piece thoroughly with creamy peri-peri sauce.
  13. Warm chicken in sauce for an additional 2-3 minutes at medium heat.
  14. Plate garlic rice as a base, then arrange chicken on top. Drizzle remaining sauce over the dish.
  15. Optional: Garnish with chopped parsley or chili flakes for extra color and flavor.

Notes

  • Always let the chicken marinate for maximum flavor, with overnight marinating giving the most intense taste.
  • Check chicken’s internal temperature reaches 165°F to ensure safe, perfectly cooked meat without drying it out.
  • For a lighter version, substitute heavy cream with Greek yogurt or coconut milk to reduce calories and add different flavor notes.
  • When toasting rice, listen for a gentle sizzling sound that signals it’s developing a nice nutty base before adding broth.
