Ingredients
Scale
Primary Ingredients:
- 1 cup green olives
- 2 eggs
- 1 cup breadcrumbs
- ½ cup all-purpose flour
Supporting Ingredients:
- 2 cloves garlic
- ½ cup mayonnaise
- 1 tablespoon lemon juice
Seasoning:
- Salt (to taste)
- Pepper (to taste)
- Vegetable oil (for frying)
Instructions
- Whisk together ½ cup mayonnaise, 2 minced garlic cloves, 1 tablespoon lemon juice, a pinch of salt, and pepper in a small bowl. Set the aioli aside for later.
- Season ½ cup all-purpose flour with a dash of salt and pepper in a shallow dish. Beat 2 eggs in a separate bowl. Pour 1 cup breadcrumbs into a third bowl.
- Roll 1 cup pitted green olives first through the seasoned flour, ensuring complete coverage. Dunk each floured olive into the beaten eggs.
- Transfer the egg-coated olives directly into the breadcrumbs, rolling and pressing gently to create a complete crispy exterior.
- Fill a frying pan with 1-2 inches of vegetable oil. Heat the oil to exactly 350°F, monitoring temperature with a cooking thermometer.
- Gently slide the breaded olives into the hot oil, working in small batches to prevent overcrowding. Fry for precisely 2-3 minutes until they turn a deep golden brown.
- Extract the olives using a slotted spoon, letting excess oil drip back into the pan. Transfer them onto paper towels to absorb additional oil.
- Arrange the crispy fried olives on a serving plate. Place the prepared garlic aioli in a small dipping bowl beside them.
Notes
- Drain olives thoroughly before breading to prevent soggy coating and ensure crispy results.
- Use panko breadcrumbs for extra crunch and a lighter, airier texture on the outside of the olives.
- Test oil temperature with a small piece of breadcrumb – it should sizzle immediately but not burn when ready for frying.
- For gluten-free version, swap regular flour and breadcrumbs with almond flour and gluten-free breadcrumbs to maintain the same delicious crunch.
