Instructions

  1. Blend the flour, paprika, garlic powder, onion powder, ½ tsp salt, and ½ tsp black pepper in a shallow dish for your coating mixture.
  2. In a separate bowl, whisk 2 large eggs with ¼ cup milk to create a smooth egg wash.
  3. Thoroughly coat each ½-inch thick pork chop in the seasoned flour, dunk into the egg mixture, then re-coat with flour. Allow the breaded chops to rest for 5 minutes to help the coating stick.
  4. Pour vegetable oil to a ¼-inch depth in a large cast iron skillet, heating to 350°F over medium-high heat.
  5. Carefully lower the breaded pork chops into the hot oil, cooking for 3-4 minutes per side until the exterior turns golden brown and crispy.
  6. Check that the internal temperature reaches 145°F, then transfer the chops to a paper towel-lined plate to drain excess oil.
  7. In the same skillet, cook 4 slices of chopped bacon until they become crisp and release 3 tablespoons of grease.
