Ingredients
Scale
Protein:
- 4 bone-in pork chops (½-inch thick)
- 4 slices bacon (chopped)
Breading and Seasoning:
- 1 cup all-purpose flour
- 3 tablespoons all-purpose flour
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
Liquid and Fat:
- 2 large eggs
- ¼ cup milk
- 2 cups whole milk
- 3 tablespoons reserved bacon grease
- Vegetable oil (for frying)
Instructions
- Blend the flour, paprika, garlic powder, onion powder, ½ tsp salt, and ½ tsp black pepper in a shallow dish for your coating mixture.
- In a separate bowl, whisk 2 large eggs with ¼ cup milk to create a smooth egg wash.
- Thoroughly coat each ½-inch thick pork chop in the seasoned flour, dunk into the egg mixture, then re-coat with flour. Allow the breaded chops to rest for 5 minutes to help the coating stick.
- Pour vegetable oil to a ¼-inch depth in a large cast iron skillet, heating to 350°F over medium-high heat.
- Carefully lower the breaded pork chops into the hot oil, cooking for 3-4 minutes per side until the exterior turns golden brown and crispy.
- Check that the internal temperature reaches 145°F, then transfer the chops to a paper towel-lined plate to drain excess oil.
- In the same skillet, cook 4 slices of chopped bacon until they become crisp and release 3 tablespoons of grease.
- Remove the bacon pieces, then whisk 3 tablespoons of flour into the hot bacon grease to create a smooth roux.
- Slowly pour 2 cups of whole milk into the roux, stirring constantly for 3-4 minutes until the gravy thickens.
- Season the gravy with salt and pepper, then fold in the reserved crispy bacon pieces.
- Arrange the golden pork chops on plates and generously ladle the bacon gravy over the top.
Notes
- Letting the breaded pork chops rest before frying helps the coating stick better and creates a crispier texture.
- Cast iron skillet gives the most even heat and creates a beautiful golden-brown crust on the pork chops.
- Check the oil temperature with a thermometer to ensure perfect frying and prevent greasy results.
- For a gluten-free version, swap regular flour with almond flour or gluten-free all-purpose flour blend, which will still provide a crispy coating.
