Description

Crispy sweet potato red lentil patties bring protein-packed goodness straight to your dinner plate with minimal effort. These golden discs deliver satisfying flavor and nutrition that makes weeknight cooking feel totally effortless.

Ingredients

Scale

Main Ingredients:

  • 1 cup red lentils
  • 1 medium sweet potato
  • 1 small onion
  • 2 garlic cloves

Spices and Seasonings:

  • ½ teaspoon cumin
  • ½ teaspoon paprika
  • ¼ teaspoon ground coriander
  • Salt and pepper
  • 2 tablespoons flour
  • ¼ cup chopped fresh cilantro
  • Olive oil

Sauce Ingredients:

  • 1 ripe avocado
  • ½ cup fresh cilantro
  • 1 garlic clove
  • 1 tablespoon lime juice
  • 2 tablespoons plain yogurt
  • Salt
  • 23 tablespoons water

Instructions

  1. Pour 1 cup rinsed red lentils into a saucepan with 2 cups water. Boil at high heat, then reduce to medium-low and simmer for 12 minutes until tender and most liquid absorbs.
  2. Drain lentils and let them cool for 5 minutes. Transfer to a large mixing bowl with 1 grated medium sweet potato, 1 finely chopped small onion, and 2 minced garlic cloves.
  3. Sprinkle ½ teaspoon cumin, ½ teaspoon paprika, ¼ teaspoon ground coriander, salt, and pepper into the bowl. Add ¼ cup chopped fresh cilantro and 2 tablespoons flour.
  4. Thoroughly mix ingredients until the mixture feels compact and holds together. Allow mixture to rest for 7 minutes to help ingredients bind.
  5. Heat a skillet over medium heat with 2 tablespoons olive oil. Create small 2-inch patties using approximately 3 tablespoons of mixture per patty.
  6. Cook patties for 4 minutes at medium heat until golden brown. Carefully flip and cook another 3 minutes until crisp edges form.
  7. For sauce, combine 1 ripe avocado, ½ cup cilantro, 1 garlic clove, 1 tablespoon lime juice, 2 tablespoons yogurt, and salt in a blender.
  8. Blend sauce ingredients at high speed for 30 seconds. Add water as needed to reach desired consistency.
  9. Plate warm patties and serve immediately with fresh avocado cilantro sauce on the side.

Notes

  • Let the lentil mixture rest before forming patties so the flour helps bind ingredients and absorb moisture.
  • Use a cast iron skillet for extra crispy edges and even browning on the patties.
  • For gluten-free version, swap regular flour with almond flour or chickpea flour to maintain binding.
  • Grate sweet potatoes finely to ensure even cooking and consistent texture throughout the patty.
