Instructions
- Pour 1 cup rinsed red lentils into a saucepan with 2 cups water. Boil at high heat, then reduce to medium-low and simmer for 12 minutes until tender and most liquid absorbs.
- Drain lentils and let them cool for 5 minutes. Transfer to a large mixing bowl with 1 grated medium sweet potato, 1 finely chopped small onion, and 2 minced garlic cloves.
- Sprinkle ½ teaspoon cumin, ½ teaspoon paprika, ¼ teaspoon ground coriander, salt, and pepper into the bowl. Add ¼ cup chopped fresh cilantro and 2 tablespoons flour.
- Thoroughly mix ingredients until the mixture feels compact and holds together. Allow mixture to rest for 7 minutes to help ingredients bind.
- Heat a skillet over medium heat with 2 tablespoons olive oil. Create small 2-inch patties using approximately 3 tablespoons of mixture per patty.
- Cook patties for 4 minutes at medium heat until golden brown. Carefully flip and cook another 3 minutes until crisp edges form.
- For sauce, combine 1 ripe avocado, ½ cup cilantro, 1 garlic clove, 1 tablespoon lime juice, 2 tablespoons yogurt, and salt in a blender.
- Blend sauce ingredients at high speed for 30 seconds. Add water as needed to reach desired consistency.
- Plate warm patties and serve immediately with fresh avocado cilantro sauce on the side.
