  3. Whisk 2 large eggs in a separate bowl until thoroughly blended and smooth.
  4. Pour 1 cup Italian-style breadcrumbs into a third shallow dish for final coating.
  5. Roll each olive first in seasoned flour, coating completely and shaking off excess.
  6. Dunk floured olive into beaten eggs, allowing full egg coverage.
  7. Transfer egg-coated olive into breadcrumbs, rolling and pressing gently to ensure complete coverage.
  8. Heat canola oil to 350°F in a deep skillet, filling approximately 2 inches deep.
  9. Carefully drop breaded olives into hot oil, working in small batches of 6-8 olives.
  10. Fry olives for 2-3 minutes, turning occasionally, until they reach a deep golden brown color.
  11. Remove fried olives using a slotted spoon, placing them on paper towels to drain excess oil.
  12. Sprinkle hot olives with sea salt immediately after removing from oil.
