Ingredients
Scale
Main Ingredients:
- 1 lb ground sausage (mild or spicy)
- 1 cup long-grain white rice (uncooked)
- 2 cups chicken broth
Supporting Ingredients (Vegetables):
- 1 small onion, finely chopped
- 1 bell pepper, diced (any color)
- 2 celery stalks, finely chopped
- 3 cloves garlic, minced
Seasoning and Garnish:
- 1 teaspoon smoked paprika
- ½ teaspoon cayenne pepper
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- ½ teaspoon salt
- ½ teaspoon black pepper
- 2 teaspoons Worcestershire sauce
- 2 green onions, chopped
- Fresh parsley, finely chopped
Instructions
- Brown the sausage in a large skillet over medium-high heat at 375°F for 5-7 minutes. Break the 1 pound of ground sausage into small crumbles while cooking. Drain all but 1 tablespoon of grease to keep rich flavor.
- Toss the finely chopped 1 small onion, 1 bell pepper, and 2 celery stalks into the skillet. Sauté for 4-5 minutes until vegetables soften and release their aromatic notes.
- Add 3 minced garlic cloves and cook for 30 seconds until their fragrance fills your kitchen. Sprinkle 1 teaspoon each of smoked paprika, dried oregano, and dried thyme across the mixture.
- Shake ½ teaspoon cayenne pepper, ½ teaspoon salt, and ½ teaspoon black pepper over the skillet. Stir thoroughly to distribute the seasonings evenly across the meat and vegetables.
- Pour 1 cup uncooked long-grain white rice and 2 cups chicken broth into the skillet. Add 2 teaspoons Worcestershire sauce for depth of flavor. Stir to combine all ingredients.
- Bring the mixture to a rolling boil at 212°F, then immediately reduce heat to low. Cover the skillet and simmer for 20 minutes until rice absorbs all liquid and becomes tender.
- Remove the skillet from heat and let it rest for 5 minutes. Gently fluff the rice with a fork to separate the grains and incorporate all ingredients.
- Sprinkle 2 chopped green onions and fresh parsley across the top. Serve the dirty rice immediately while it’s hot and steaming.
Notes
- Always use a heavy-bottomed skillet to prevent burning and ensure even cooking of the sausage and vegetables.
- Drain most of the sausage grease, but keep a tablespoon for added flavor that makes this dish so rich and satisfying.
- Chop vegetables uniformly to help them cook evenly and create a consistent texture throughout the dirty rice.
- For a lighter version, swap pork sausage with turkey sausage and use brown rice instead of white rice to boost nutritional value.
