Description

Sizzling skillet zucchini and mushrooms bring garden-fresh flavors right to your dinner table with minimal fuss and maximum taste. Tender veggies caramelized in a hot pan create a simple side dish that complements any main course perfectly.

Ingredients

Scale

Main Ingredients:

  • 2 medium Zucchini
  • 8 ounces Button Mushrooms
  • 1 medium Yellow Onion
  • 2 cloves Garlic

Supporting Ingredients:

  • 1 tablespoon Olive Oil
  • ½ tablespoon Butter
  • ½ cup Vegetable Broth
  • ¼ cup Fresh Chopped Herbs
  • ¼ cup Fresh Parsley
  • ¼ cup Grated Parmesan

Seasonings:

  • to taste Salt
  • to taste Black Pepper

Instructions

  1. Heat 1 tablespoon olive oil and ½ tablespoon butter in a large skillet over medium-high heat for 1-2 minutes until butter melts and becomes fragrant.
  2. Add 2 medium zucchini slices to the skillet, seasoning with salt and pepper. Sauté for 3-4 minutes until they turn golden and become fork-tender.
  3. Transfer zucchini to a separate plate, then wipe the skillet clean with a paper towel.
  4. Return skillet to heat and melt remaining butter. Add 1 medium diced yellow onion, cooking for 2 minutes until softened.
  5. Introduce 8 ounces of cleaned button mushrooms to the skillet. Sauté for 5-7 minutes, stirring occasionally, until they brown nicely.
  6. Sprinkle 2 minced garlic cloves and ¼ cup fresh chopped herbs into the pan. Stir quickly for 20 seconds until the aroma releases.
  7. Gently fold the sautéed zucchini back into the skillet, mixing all ingredients together. Warm for 1 minute.
  8. Pour ½ cup vegetable broth into the skillet, letting it simmer for 2 minutes and allowing flavors to meld.
  9. Sprinkle ¼ cup grated Parmesan and ¼ cup fresh parsley over the dish before serving hot.

Notes

  • Choose younger, smaller zucchini for more tender and sweeter results when sautéing.
  • Fresh herbs make a significant difference, so grab them from your garden or farmers market if possible.
  • Salt the zucchini slices lightly before cooking to help draw out excess moisture and ensure better caramelization.
  • For a vegan version, replace butter with olive oil and use nutritional yeast instead of Parmesan cheese.
