Ingredients
Scale
Main Ingredients:
- 1 lb baby bok choy
- 1 lb cremini mushrooms
Aromatics and Seasonings:
- 4 garlic cloves
- 1-inch ginger
- 2 green onions
- 1–3 dried red chilies
Sauce and Cooking Ingredients:
- 3 tablespoons peanut oil
- 3 tablespoons soy sauce
- 1 tablespoon vegetarian oyster sauce
- 1 teaspoon sesame oil
- 1 teaspoon sugar
- ½ teaspoon black pepper
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Trim and slice 1 lb baby bok choy into halves if large, ensuring clean, even cuts for uniform cooking.
- Whisk together 3 tbsp soy sauce, 1 tbsp vegetarian oyster sauce, 1 tsp sugar, ½ tsp black pepper, and 1 tsp sesame oil in a small bowl until fully combined.
- Heat 1 tbsp peanut oil in a wok over medium-high heat at 375°F and steam bok choy for 2-3 minutes until bright green and tender. Remove and set aside.
- Add another 1 tbsp peanut oil to the wok and sauté 1 lb halved cremini mushrooms for 4-5 minutes until golden brown and caramelized.
- Toss in 4 minced garlic cloves, 1-inch grated ginger, 2 sliced green onions, and 2-3 dried red chilies. Stir continuously for 30-45 seconds until fragrant.
- Mix 1 tbsp cornstarch with 2 tbsp water to create a smooth slurry, then pour sauce and slurry into the wok. Simmer for 1-2 minutes until sauce thickens and becomes glossy.
- Return bok choy to the wok, gently tossing to coat with sauce and heat through for an additional 30 seconds. Serve immediately.
Notes
- Select fresh, crisp bok choy with vibrant green leaves for the best texture and flavor.
- Add a splash of rice wine or mirin to the sauce for extra depth and complexity.
- Use high heat when stir-frying mushrooms to achieve a perfect golden-brown caramelization without releasing too much moisture.
- For a protein boost, toss in cubed tofu or tempeh during the mushroom cooking stage to make the dish more substantial.
