Instructions
- Heat 1 Tbsp olive oil in a broad saute pan over medium heat. Toast the 5 oz Fideo noodles until they turn golden brown. Transfer browned noodles to a paper towel-lined plate.
- Crumble 10 oz ground beef into the same pan. Sprinkle ½ tsp salt, ¼ tsp black pepper, ½ tsp onion powder, ½ tsp garlic powder, ¼ tsp cumin, and ½ tsp smoked paprika over the meat. Cook until completely browned.
- Add ⅓ cup chopped onions to the meat. Saute for 3 minutes until onions become translucent and soft.
- Toss in 1 large cubed Russet potato and the 14.5 oz can of diced tomatoes. Stir to combine with the meat mixture.
- Crumble 1 chicken bouillon cube into the pan. Pour 3 cups of fresh water over the ingredients. Simmer at medium heat for 15 minutes, allowing the potatoes to become tender.
- Gently fold the previously browned Fideo noodles back into the pan. If the mixture seems too thick, splash in a bit more water. Cover and cook for 10 minutes until noodles reach your desired tenderness.
