Description

Strawberry Balsamic Chicken became my go-to dinner when friends come over and want something special without crazy complicated cooking. Rich flavors of sweet strawberries and tangy balsamic vinegar create a simple yet elegant meal that looks impressive but takes less than an hour to prepare.

Ingredients

Scale

Main Ingredients:

  • 2 chicken breasts, boneless and skinless
  • 1 cup strawberries, sliced

Liquids and Seasonings:

  • 1 tablespoon olive oil
  • ¼ cup balsamic vinegar
  • 1 teaspoon Dijon mustard
  • 1 tablespoon honey

Garnish and Optional Toppings:

  • ¼ cup fresh basil leaves, torn or chopped
  • ¼ cup crumbled feta or sliced mozzarella
  • Salt, to taste
  • Pepper, to taste

Instructions

  1. Thoroughly dry 2 chicken breasts (170-225 grams) using paper towels, then generously season both sides with 2 grams salt and 1 gram black pepper.
  2. Heat 15 milliliters (1 tablespoon) olive oil in a 10-inch skillet over medium-high heat at 204°C (400°F) for 2 minutes until oil shimmers.
  3. Place seasoned chicken breasts into hot skillet and cook for 5-6 minutes until golden brown, creating a crispy exterior.
  4. Flip chicken and cook opposite side for additional 5-6 minutes, ensuring internal temperature reaches 74°C (165°F) for food safety.
  5. Remove chicken from skillet and transfer to clean plate, keeping warm.
  6. Pour 60 milliliters (¼ cup) balsamic vinegar into same skillet, reducing heat to medium-low at 148°C (300°F).
  7. Add 15 milliliters (1 tablespoon) honey and simmer for 4-5 minutes until liquid reduces by half and thickens slightly.
  8. Optional: Stir 5 grams Dijon mustard into balsamic reduction for deeper flavor complexity.
  9. Add 150 grams sliced strawberries to skillet, cooking 1-2 minutes until edges soften and release natural juices.
  10. Place chicken back into skillet, coating with strawberry mixture and balsamic glaze.
  11. Sprinkle 30 grams crumbled feta or sliced mozzarella over chicken.
  12. Garnish with 15 grams fresh torn basil leaves before serving immediately.

Notes

  • Fresh herbs like basil or mint add a bright, springtime flavor that complements the strawberries and chicken perfectly.
  • Swap chicken for tofu or tempeh to make this recipe vegetarian, ensuring you press and marinate the protein beforehand for maximum flavor absorption.
  • Use a meat thermometer to check chicken doneness, aiming for an internal temperature of 165°F to guarantee safe and juicy meat.
  • Let the balsamic reduction cool slightly before drizzling to prevent burning and achieve a thick, glossy consistency that clings beautifully to the chicken.
