Strawberry Balsamic Chicken became my go-to dinner when friends come over and want something special without crazy complicated cooking. Rich flavors of sweet strawberries and tangy balsamic vinegar create a simple yet elegant meal that looks impressive but takes less than an hour to prepare.
Ingredients
Scale
Main Ingredients:
- 2 chicken breasts, boneless and skinless
- 1 cup strawberries, sliced
Liquids and Seasonings:
- 1 tablespoon olive oil
- ¼ cup balsamic vinegar
- 1 teaspoon Dijon mustard
- 1 tablespoon honey
Garnish and Optional Toppings:
- ¼ cup fresh basil leaves, torn or chopped
- ¼ cup crumbled feta or sliced mozzarella
- Salt, to taste
- Pepper, to taste
Instructions
- Thoroughly dry 2 chicken breasts (170-225 grams) using paper towels, then generously season both sides with 2 grams salt and 1 gram black pepper.
- Heat 15 milliliters (1 tablespoon) olive oil in a 10-inch skillet over medium-high heat at 204°C (400°F) for 2 minutes until oil shimmers.
- Place seasoned chicken breasts into hot skillet and cook for 5-6 minutes until golden brown, creating a crispy exterior.
- Flip chicken and cook opposite side for additional 5-6 minutes, ensuring internal temperature reaches 74°C (165°F) for food safety.
- Remove chicken from skillet and transfer to clean plate, keeping warm.
- Pour 60 milliliters (¼ cup) balsamic vinegar into same skillet, reducing heat to medium-low at 148°C (300°F).
- Add 15 milliliters (1 tablespoon) honey and simmer for 4-5 minutes until liquid reduces by half and thickens slightly.
- Optional: Stir 5 grams Dijon mustard into balsamic reduction for deeper flavor complexity.
- Add 150 grams sliced strawberries to skillet, cooking 1-2 minutes until edges soften and release natural juices.
- Place chicken back into skillet, coating with strawberry mixture and balsamic glaze.
- Sprinkle 30 grams crumbled feta or sliced mozzarella over chicken.
- Garnish with 15 grams fresh torn basil leaves before serving immediately.
Notes
- Fresh herbs like basil or mint add a bright, springtime flavor that complements the strawberries and chicken perfectly.
- Swap chicken for tofu or tempeh to make this recipe vegetarian, ensuring you press and marinate the protein beforehand for maximum flavor absorption.
- Use a meat thermometer to check chicken doneness, aiming for an internal temperature of 165°F to guarantee safe and juicy meat.
- Let the balsamic reduction cool slightly before drizzling to prevent burning and achieve a thick, glossy consistency that clings beautifully to the chicken.
