Instructions

  2. Combine 1 ½ cups cornmeal, ½ cup all-purpose flour, and 1 tsp seafood seasoning in a 2-gallon plastic bag. Shake the bag to distribute ingredients evenly. Add 3-4 fish strips at a time, gently tumbling to coat each piece with the seasoned breading.
  3. Pour 1 quart vegetable oil into a deep fryer or heavy pot. Heat oil to 360°F, carefully monitoring the temperature with a kitchen thermometer.
  4. Carefully lower breaded catfish strips into hot oil, working in small batches to prevent overcrowding. Fry each batch for 3 minutes, turning once, until the exterior becomes golden brown and crispy.
