Description

Crispy fried pineapple rings bring a sweet tropical twist to your snack time that’ll make your taste buds dance with joy. Golden and crunchy, these rings are perfect for satisfying your craving for something delightfully different.

Ingredients

Scale

Main Ingredients:

  • 8 pineapple rings
  • 1 cup dark rum
  • 1 cup coconut rum

Batter and Coating:

  • 1 ½ cups all-purpose flour
  • 2 large eggs
  • ½ cup coconut milk
  • 1 (10-oz.) bag sweetened coconut flakes

Additional Ingredients:

  • Vegetable oil, for frying
  • 4 ounces cream cheese, softened
  • ½ cup powdered sugar

Instructions

  1. Submerge 8 pineapple rings completely in 1 cup dark rum and 1 cup coconut rum. Let them absorb the tropical liquids for 15 minutes.
  2. Combine 1 ½ cups all-purpose flour with 1 (10-oz.) bag sweetened coconut flakes in a shallow dish. Create an even coating mixture for your pineapple rings.
  3. Whisk 2 large eggs with ½ cup coconut milk in a separate bowl. Create a smooth, consistent egg wash for dipping.
  4. Remove pineapple rings from rum and drain excess liquid. Carefully dredge each ring through the flour-coconut mixture, ensuring complete coverage.
  5. Dunk the coated rings into the egg wash, allowing excess to drip off. Ensure a thin, even layer of egg wash clings to the coconut coating.
  6. Heat vegetable oil to 375°F in a deep skillet. Carefully lower coated rings into hot oil, frying 2-3 rings at a time.
  7. Fry each ring for 2-3 minutes, turning once, until the exterior becomes golden brown and crispy.
  8. Remove fried rings with a slotted spoon, placing them on paper towels to drain excess oil.
  9. Blend 4 oz. softened cream cheese with ½ cup powdered sugar until your dip becomes silky and smooth.
  10. Serve warm pineapple rings immediately alongside the creamy dipping sauce.

Notes

  • Drain pineapple rings thoroughly after rum soak to prevent oil splattering during frying.
  • Toast coconut flakes briefly before mixing with flour for deeper, nuttier flavor in the coating.
  • Use a deep-fry thermometer to maintain oil temperature around 350°F for crispy, evenly golden rings.
  • Let cream cheese dip sit at room temperature for 15 minutes before serving to soften and enhance its creamy texture.
