Description

Pyzy Polish Comfort brings together crispy potatoes, caramelized onions, and smoky kielbasa in a hearty skillet that reminds me of family gatherings back home. Sizzling and satisfying, this traditional Polish dish delivers rich flavors that warm your soul with each delicious bite.

Ingredients

Scale

Protein:

  • 1 pound Cajun smoked sausage
  • 1 pound smoked turkey sausage

Vegetables:

  • 2 pounds baby red potatoes
  • 2 large onions

Seasonings and Oils:

  • 1 tablespoon Cajun seasoning
  • 1 teaspoon paprika
  • 2 tablespoons olive oil
  • Salt
  • Pepper

Instructions

  1. Cut 1 pound of Cajun smoked sausage and 1 pound of smoked turkey sausage into ½-inch thick rounds using a sharp knife.
  2. Slice 2 large onions into wedge-shaped pieces approximately 1-inch wide.
  3. Halve 2 pounds of baby red potatoes into uniform bite-sized pieces to ensure even cooking.
  4. Transfer sausage rounds, potato halves, and onion wedges into a large mixing bowl.
  5. Drizzle 2 tablespoons of olive oil over the ingredients in the bowl.
  6. Sprinkle 1 tablespoon of Cajun seasoning, 1 teaspoon of paprika, and add salt and pepper directly onto the mixture.
  7. Use your hands to thoroughly toss and coat every ingredient with the seasonings and oil.
  8. Line a large baking sheet with parchment paper to prevent sticking.
  9. Spread the seasoned mixture in a single layer across the baking sheet, ensuring no overlapping pieces.
  10. Preheat your oven to 375°F and position the rack in the center.
  11. Slide the baking sheet into the oven and roast for 45 minutes, rotating the pan halfway through cooking.
  12. Check the potatoes with a fork – they should be tender and golden brown when done.
  13. Remove from the oven and let the dish rest for 5 minutes before serving to allow flavors to settle.

Notes

  • Use a cast-iron skillet for extra crispy edges and deeper flavor development on your potatoes and sausages.
  • When selecting sausages, opt for high-quality smoked Polish varieties with robust seasonings for maximum taste impact.
  • Allow potatoes to sit in seasoning mixture for 10-15 minutes before baking to help spices penetrate more deeply.
  • Chop onions into consistent sizes to ensure even cooking and prevent burning around the edges of your baking sheet.
