Instructions

  1. Heat a deep skillet to medium-high heat. Drizzle 2 tablespoons olive oil and add 1 tablespoon butter until melted.
  2. Season 1 lb chicken breasts with 1 teaspoon salt, ⅛ teaspoon black pepper, 1 teaspoon Italian seasoning, and ½ teaspoon red pepper flakes.
  3. Cook chicken in hot skillet for 5-6 minutes per side until golden brown and internal temperature reaches 165°F. Remove chicken and set aside.
  4. Reduce skillet heat to medium. Add 4 minced garlic cloves and sauté for 30 seconds until fragrant.
  5. Sprinkle in lemon zest from half a lemon and squeeze juice from whole lemon into skillet.
  6. Add 1.5 cups long-grain white rice to skillet, stirring to coat with garlic-lemon mixture. Toast rice for 1-2 minutes.
  7. Pour 3 cups chicken stock into skillet. Bring liquid to full boil, then reduce heat to low.
  8. Cover skillet and simmer rice for 18-20 minutes until liquid absorbs and rice becomes tender.
  9. Stir in ½ cup heavy cream and 1 cup shredded Parmesan cheese until sauce turns smooth and creamy.
