Instructions

  1. Marinate 1 lb chicken cubes in 2 tablespoons soy sauce, 1 tablespoon rice vinegar, 1 tablespoon cornstarch, 1 teaspoon sesame oil, ½ teaspoon ground ginger, and ¼ teaspoon white pepper for 30-120 minutes in the refrigerator.
  2. Heat 1 tablespoon vegetable oil in a skillet at 375°F. Cook the marinated chicken for 5-7 minutes until fully cooked and golden brown. Transfer chicken to a separate plate.
  3. Add another 1 tablespoon vegetable oil to the same skillet. Sauté 4 minced garlic cloves and 1 diced onion for 1-2 minutes until aromatic and soft.
  4. Toss 1 cup mixed vegetables into the skillet. Cook for 3-5 minutes at medium-high heat until they reach a tender-crisp texture.
  5. Clear a space in the skillet and pour 2 lightly beaten eggs. Scramble them completely, then chop into small pieces with your spatula.
  6. Fold 3 cups cooked rice into the vegetable and egg mixture. Break down any rice clumps during mixing.
  7. Drizzle 2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 teaspoon sesame oil, ½ teaspoon ground ginger, and ¼ teaspoon white pepper over the rice. Stir thoroughly.
  8. Return cooked chicken to the skillet. Stir-fry everything together for 2-3 minutes at 400°F until heated through.
  9. Remove from heat and garnish with 2 thinly sliced green onions and optional sesame seeds. Serve immediately while hot.
