Instructions

  1. Marinate 1 pound chicken strips with 1 tablespoon soy sauce, 2 teaspoons cornstarch, and ½ teaspoon black pepper. Toss until each piece is evenly coated.
  2. Rinse 2 cups jasmine rice under cold water until the water runs clear to remove excess starch.
  3. Boil 2 cups water in a medium saucepan. Add rinsed rice and ½ teaspoon salt. Reduce heat to low, cover, and simmer for 15 minutes.
  4. After 15 minutes, turn off heat and let rice sit covered for 5 more minutes. Fluff with a fork when ready.
  5. Whisk sauce ingredients in a small bowl: 1 tablespoon soy sauce, 1 tablespoon oyster sauce, 1 tablespoon hoisin sauce, 1 teaspoon sesame oil, 1 teaspoon honey, ½ teaspoon red pepper flakes, ¼ cup chicken broth, and 2 teaspoons cornstarch.
  6. Heat 1 tablespoon vegetable oil in a wok over medium-high heat. Add chicken strips in a single layer.
  7. Sear chicken for 2-3 minutes without stirring. Flip and cook another 2 minutes until golden and fully cooked.
  8. Remove chicken from pan. Add another tablespoon oil and stir-fry sliced bell peppers for 2 minutes.
  9. Add 3 minced garlic cloves, 1-inch grated ginger, and chopped green onions. Stir-fry 30 seconds until fragrant.
  10. Return chicken to pan. Pour in prepared sauce and stir quickly to coat everything.
  11. Cook 1-2 minutes until sauce thickens and ingredients are heated through.
  12. Serve hot garlic chicken stir-fry over steamed jasmine rice. Garnish with extra green onions.
