Ingredients
Scale
Main Ingredients:
- 2 lbs Yukon Gold potatoes
- 1 large red onion
- 1 red bell pepper
- 1 green bell pepper
Supporting Ingredients:
- 4 tablespoons olive oil
- 6 cloves garlic
- 1 jalapeno pepper
Seasonings and Aromatics:
- 1 teaspoon smoked paprika
- ½ teaspoon cumin powder
- ¼ teaspoon cayenne pepper
- ½ teaspoon dried oregano
- Salt
- Freshly ground black pepper
- ¼ cup vegetable broth
- ½ cup fresh cilantro
- Juice of ½ lime
Instructions
- Salt your potatoes generously and boil the 2 lbs of cubed Yukon Gold pieces in cold water for 8-10 minutes until fork-tender.
- Create an ice bath and transfer potatoes into it for 5 minutes to halt cooking. Drain completely and pat dry with paper towels.
- Heat 2 tablespoons olive oil in a large skillet at medium temperature. Sauté 6 minced garlic cloves and 1 sliced red onion for 3-5 minutes until onion softens.
- Add chopped red and green bell peppers and minced jalapeno. Cook for 5-7 minutes over medium heat until peppers become slightly tender.
- Sprinkle 1 teaspoon smoked paprika, ½ teaspoon cumin, ¼ teaspoon cayenne, and ½ teaspoon oregano into the skillet. Stir constantly for 1 minute.
- Introduce your dried potatoes to the vegetable mixture. Pour remaining 2 tablespoons olive oil over them.
- Raise heat to medium-high and spread potatoes in a single layer. Cook 10-15 minutes, turning occasionally to achieve golden crispy edges.
- Pour ¼ cup vegetable broth into the skillet if potatoes stick, scraping browned bits from bottom. Cook until liquid evaporates.
- Remove from heat and fold in ½ cup fresh cilantro and juice from ½ lime. Taste and season accordingly.
- Plate immediately and garnish with optional sour cream or avocado slices.
Notes
- Ensure potatoes are thoroughly dried before cooking to achieve maximum crispiness and prevent steaming instead of browning.
- Select waxy potato varieties like Yukon Gold or red potatoes for best texture and even cooking.
- Use a heavy-bottomed skillet or cast-iron pan to get an even, golden-brown crust on the potatoes without burning.
- For a gluten-free version, verify all spices are certified gluten-free and replace any questionable ingredients with safe alternatives.
