Instructions

  1. Salt your potatoes generously and boil the 2 lbs of cubed Yukon Gold pieces in cold water for 8-10 minutes until fork-tender.
  2. Create an ice bath and transfer potatoes into it for 5 minutes to halt cooking. Drain completely and pat dry with paper towels.
  3. Heat 2 tablespoons olive oil in a large skillet at medium temperature. Sauté 6 minced garlic cloves and 1 sliced red onion for 3-5 minutes until onion softens.
  4. Add chopped red and green bell peppers and minced jalapeno. Cook for 5-7 minutes over medium heat until peppers become slightly tender.
  5. Sprinkle 1 teaspoon smoked paprika, ½ teaspoon cumin, ¼ teaspoon cayenne, and ½ teaspoon oregano into the skillet. Stir constantly for 1 minute.
  6. Introduce your dried potatoes to the vegetable mixture. Pour remaining 2 tablespoons olive oil over them.
  7. Raise heat to medium-high and spread potatoes in a single layer. Cook 10-15 minutes, turning occasionally to achieve golden crispy edges.
  8. Pour ¼ cup vegetable broth into the skillet if potatoes stick, scraping browned bits from bottom. Cook until liquid evaporates.
  9. Remove from heat and fold in ½ cup fresh cilantro and juice from ½ lime. Taste and season accordingly.
  10. Plate immediately and garnish with optional sour cream or avocado slices.
