  • 1 cup chicken broth
  • 1 tablespoon lemon juice
  • 120 millilitres milk
  • 4 tablespoons unsalted butter
  • 2 tablespoons butter
  • 2 tablespoons brown sugar
  • Salt and black pepper, to taste
  • Fresh parsley, chopped, for garnish

Instructions

  1. Season 4 chicken breasts thoroughly with 1 tablespoon each of dried oregano and thyme, plus salt and black pepper across all surfaces.
  2. Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 375°F. Sear chicken breasts for 5-7 minutes per side until golden brown and internal temperature reaches 165°F.
  3. Transfer chicken to a separate plate. Keep warm while maintaining temperature.
  4. Use the same skillet and add 4 minced garlic cloves. Cook for exactly 1 minute until fragrant.
  5. Pour 1 cup chicken broth and 1 tablespoon lemon juice into the skillet. Scrape pan’s browned bits thoroughly.
  6. Return chicken to skillet. Simmer gently in sauce for 5 minutes to infuse flavor.
  7. Boil 900 grams peeled, cubed potatoes in salted water for 15-20 minutes until fork-tender.
  8. Drain potatoes completely. Return to pot and add 120 millilitres milk and 4 tablespoons butter.
  9. Mash potatoes until smooth and creamy. Season with salt and pepper to your taste preference.
  10. Melt 2 tablespoons butter in another pan over medium heat at 350°F.
  11. Add 450 grams carrot sticks. Saute for 5 minutes until slightly softened.
  12. Sprinkle 2 tablespoons brown sugar over carrots. Stir and cook for additional 5 minutes.
  13. Plate chicken, mashed potatoes, and glazed carrots. Drizzle pan sauce over chicken.
  14. Garnish with freshly chopped parsley before serving.
