- 2 tablespoons olive oil
- 4 cloves garlic, minced
- 1 tablespoon dried oregano

- 1 tablespoon lemon juice
- 120 millilitres milk
- 4 tablespoons unsalted butter
- 2 tablespoons butter
- 2 tablespoons brown sugar

Instructions
- Season 4 chicken breasts thoroughly with 1 tablespoon each of dried oregano and thyme, plus salt and black pepper across all surfaces.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 375°F. Sear chicken breasts for 5-7 minutes per side until golden brown and internal temperature reaches 165°F.
- Transfer chicken to a separate plate. Keep warm while maintaining temperature.
- Use the same skillet and add 4 minced garlic cloves. Cook for exactly 1 minute until fragrant.
- Pour 1 cup chicken broth and 1 tablespoon lemon juice into the skillet. Scrape pan’s browned bits thoroughly.
- Return chicken to skillet. Simmer gently in sauce for 5 minutes to infuse flavor.
- Boil 900 grams peeled, cubed potatoes in salted water for 15-20 minutes until fork-tender.
- Drain potatoes completely. Return to pot and add 120 millilitres milk and 4 tablespoons butter.
- Mash potatoes until smooth and creamy. Season with salt and pepper to your taste preference.
- Melt 2 tablespoons butter in another pan over medium heat at 350°F.
- Add 450 grams carrot sticks. Saute for 5 minutes until slightly softened.
- Sprinkle 2 tablespoons brown sugar over carrots. Stir and cook for additional 5 minutes.
- Plate chicken, mashed potatoes, and glazed carrots. Drizzle pan sauce over chicken.
- Garnish with freshly chopped parsley before serving.
Notes
- Pat chicken breasts completely dry before seasoning to ensure a perfect golden-brown sear and crisp exterior.
- Use a meat thermometer to check chicken doneness, aiming for an internal temperature of 165°F for safe and juicy results.
- For creamier mashed potatoes, warm your milk and butter before adding to help create a smoother, more velvety texture.
- When sautéing carrots, watch carefully to prevent burning and achieve a glossy, caramelized finish without scorching.
