Ingredients

Scale

Proteins:

  • 1 pound chicken breast

Vegetables and Aromatics:

  • 8 ounces white mushrooms
  • 1 large onion
  • 1 small red bell pepper
  • 3 cloves garlic
  • 2-inch ginger piece
  • 3 green onions

Sauce and Seasonings:

  • 3 tablespoons oyster sauce
  • 2 tablespoons low sodium soy sauce
  • 1 tablespoon low sodium soy sauce
  • 1 tablespoon cornstarch
  • 1 tablespoon Shaoxing wine
  • 1 tablespoon brown sugar
  • 1 tablespoon peanut oil
  • 2 teaspoons rice vinegar
  • 1 teaspoon dark soy sauce
  • 1 teaspoon sesame oil
  • ½ teaspoon baking soda

Instructions

  1. Tenderize the chicken by mixing 1 pound thinly sliced chicken breast with 1 tablespoon cornstarch, ½ teaspoon baking soda, 1 tablespoon Shaoxing wine, and 1 tablespoon soy sauce. Let the mixture rest for 10-15 minutes.
  2. Whisk together 3 tablespoons oyster sauce, 2 tablespoons soy sauce, 1 teaspoon dark soy sauce, 1 tablespoon brown sugar, 2 teaspoons rice vinegar, and 1 teaspoon sesame oil to create your stir-fry sauce.
  3. Heat 1 tablespoon peanut oil in a skillet at 400°F. Cook chicken in single-layer batches until golden brown and internal temperature reaches 165°F. Transfer cooked chicken to a plate.
  4. Add remaining oil to the same skillet at medium-high heat. Sauté 1 sliced onion, 3 sliced garlic cloves, and 2-inch julienned ginger for 1-2 minutes until aromatic.
  5. Introduce 8 ounces sliced mushrooms and 1 thinly sliced red bell pepper to the pan. Cook for 4-5 minutes, allowing mushrooms to soften and develop light browning.
  6. Return chicken to the skillet. Pour prepared sauce over the mixture, stirring to coat evenly. Simmer for 1-2 minutes until sauce thickens and clings to ingredients.
  7. Sprinkle 3 sliced green onions over the dish. Serve immediately with steamed rice or noodles.

Notes

  • Tenderize chicken by marinating briefly with cornstarch and baking soda, which helps create a softer, more silky texture.
  • Cooking chicken in batches prevents overcrowding and ensures each piece browns beautifully instead of steaming.
  • Select fresh, firm mushrooms for the best flavor and texture, avoiding any that look soft or discolored.
  • For a low-carb version, replace rice with cauliflower rice or serve over zucchini noodles to reduce overall carbohydrates.
