Description

Garlic pistachio brigadeiro brings together unexpected flavors that dance on your palate with surprising delight. Brazilian chocolate truffles get a savory twist that will make your taste buds do a happy little celebration.

Ingredients

Scale

Main Ingredients:

  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup crushed pistachios
  • ¼ cup finely chopped garlic

Supporting Ingredients:

  • 2 tablespoons unsweetened cocoa powder
  • 1 tablespoon unsalted butter
  • 1 teaspoon vanilla extract

Finishing Ingredient:

  • 1 pinch salt

Instructions

  1. Melt 1 tablespoon unsalted butter in a saucepan over medium heat. Saute ¼ cup finely chopped garlic until aromatic and golden, around 2-3 minutes.
  2. Pour 1 can sweetened condensed milk into the pan. Whisk in 2 tablespoons cocoa powder and a pinch of salt until completely integrated.
  3. Reduce heat to medium-low. Continuously stir the mixture for 10-15 minutes at 180°F, ensuring it doesn’t stick or burn. Your mixture will gradually thicken and start pulling away from pan edges.
  4. Remove the pan from heat. Fold in 1 cup crushed pistachios and 1 teaspoon vanilla extract. Mix thoroughly to distribute ingredients evenly.
  5. Transfer the mixture to a greased plate. Allow it to cool and set for 10 minutes at room temperature.
  6. Once slightly cooled, use your hands to roll the mixture into small 1-inch balls. Work quickly to prevent sticking.
  7. Gently roll each ball in additional crushed pistachios, ensuring a complete and even coating.
  8. Refrigerate the brigadeiros for 30 minutes to help them firm up and maintain their shape.

Notes

  • Ensure garlic is finely chopped to blend seamlessly into the brigadeiro without overwhelming chunks.
  • Use low-sodium butter if watching salt intake, as the sweetened condensed milk already provides sweetness.
  • Toast pistachios briefly before crushing to enhance their nutty flavor and add depth to the recipe.
  • Choose high-quality cocoa powder for a rich, smooth chocolate base that complements the garlic’s subtle bite.
