  4. Gently nestle 1¼ pounds peeled jumbo shrimp into the tomato base. Cover and cook until the shrimp turn a beautiful pink, about 3 minutes.
  5. Brighten the dish by stirring in fresh lemon zest, 1 tablespoon lemon juice, and ¼ cup chopped dill.
  6. Crumble 6 ounces of feta cheese over the top, letting it melt slightly into the warm shrimp mixture.
