Instructions
- Boil 1 lb mixed baby potatoes in salted water at high heat for 10-12 minutes until fork-tender. Drain completely and let steam evaporate.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 375°F. Place potatoes in single layer and sauté for 5-6 minutes until golden and crispy on each side.
- Whisk together ¼ cup Dijon mustard, 1 tablespoon honey, ¼ cup chicken broth, 1 teaspoon garlic powder, 1 teaspoon onion powder, ½ teaspoon oregano, ½ teaspoon paprika, salt and pepper in the same skillet.
- Simmer mustard mixture for 2-3 minutes at low heat until sauce slightly thickens and becomes glossy.
- Gently roll potatoes in honey mustard glaze for 1-2 minutes, ensuring each potato gets fully coated.
- Transfer glazed potatoes to serving plate and sprinkle 1 tablespoon fresh chopped chives across the top.
