Instructions

  1. Thoroughly blot 4 chicken breasts with paper towels to remove excess moisture. Generously season both sides with 1 teaspoon salt and ½ teaspoon black pepper.
  2. Pour 2 tablespoons extra virgin olive oil into a large skillet heated to 375°F. Carefully place chicken pieces and sear for 6 minutes until rich golden-brown, creating a crispy exterior.
  3. Transfer chicken onto a clean plate. Reduce skillet heat to medium and add 4 minced garlic cloves. Stir constantly for 45-60 seconds until fragrant but not browned.
  4. Pour 28 ounces crushed tomatoes and ½ cup red wine into the skillet. Use a wooden spoon to scrape any caramelized bits from bottom of pan, creating deeper flavor complexity.
  5. Return chicken to skillet, nestling pieces into sauce. Lower heat to 225°F and cover. Simmer gently for 35 minutes, allowing chicken to become tender and sauce to thicken.
  6. Sprinkle 1 teaspoon dried oregano and 1 teaspoon chopped fresh basil across the surface. Squeeze fresh lemon juice over chicken and dust with ½ cup grated Parmesan cheese.
  7. Remove lid and let sauce reduce for additional 5 minutes. Plate chicken and spoon sauce generously around each piece.
