Ingredients
Scale
Main Proteins:
- 4 Chicken Breasts or Thighs
Sauce Ingredients:
- 1 28-ounce can Crushed Tomatoes
- ½ cup Red Wine
- 2 tablespoons Extra Virgin Olive Oil
- 4 Garlic cloves
Seasonings and Finishing:
- 1 teaspoon Dried Oregano
- 1 teaspoon Fresh Basil
- ½ cup Grated Parmesan Cheese
- 1 Lemon
- Salt
- Pepper
Instructions
- Thoroughly blot 4 chicken breasts with paper towels to remove excess moisture. Generously season both sides with 1 teaspoon salt and ½ teaspoon black pepper.
- Pour 2 tablespoons extra virgin olive oil into a large skillet heated to 375°F. Carefully place chicken pieces and sear for 6 minutes until rich golden-brown, creating a crispy exterior.
- Transfer chicken onto a clean plate. Reduce skillet heat to medium and add 4 minced garlic cloves. Stir constantly for 45-60 seconds until fragrant but not browned.
- Pour 28 ounces crushed tomatoes and ½ cup red wine into the skillet. Use a wooden spoon to scrape any caramelized bits from bottom of pan, creating deeper flavor complexity.
- Return chicken to skillet, nestling pieces into sauce. Lower heat to 225°F and cover. Simmer gently for 35 minutes, allowing chicken to become tender and sauce to thicken.
- Sprinkle 1 teaspoon dried oregano and 1 teaspoon chopped fresh basil across the surface. Squeeze fresh lemon juice over chicken and dust with ½ cup grated Parmesan cheese.
- Remove lid and let sauce reduce for additional 5 minutes. Plate chicken and spoon sauce generously around each piece.
Notes
- Pat the chicken completely dry before seasoning to help achieve a perfect golden-brown sear with maximum flavor.
- Choose a heavy-bottomed skillet for even heat distribution and better browning of the chicken.
- Fresh herbs make a significant difference, so use freshly chopped basil or parsley instead of dried when possible.
- For a lower-carb version, serve the chicken over zucchini noodles or cauliflower rice instead of traditional pasta.
