Instructions
- Heat a large skillet to medium temperature and cook 6 links of sweet Italian sausage until golden brown on all sides, approximately 8-10 minutes. Transfer sausages to a cutting board.
- Slice the cooked sausage into ½-inch thick coin-shaped pieces using a sharp knife.
- Return the same skillet to medium heat and melt 2 tablespoons of butter until it’s bubbling gently.
- Add 1 medium yellow onion and ½ medium red onion, sliced thinly, along with 4 minced garlic cloves. Sauté until the onions become soft and translucent, about 5-6 minutes.
- Introduce 1 large red bell pepper and 1 medium green bell pepper, both sliced into strips. Sprinkle 1 teaspoon dried basil and 1 teaspoon dried oregano over the vegetables.
- Cook the peppers until they turn tender and slightly caramelized, stirring occasionally, approximately 7-8 minutes.
- Return the sliced sausage to the skillet and pour ¼ cup white wine over the mixture. Allow the liquid to simmer and reduce by half, which takes about 3-4 minutes.
- Remove the skillet from heat when the wine has created a light, glossy sauce coating the sausage and vegetables.

- Slice sausages at a slight angle for more attractive, even-sized pieces that cook consistently.
- Fresh herbs make a big difference, so grab basil and oregano from your garden or a good produce market if possible.
