  • 3 tablespoons Low sodium soy sauce
  • 2 tablespoons Rice wine vinegar
  • ¾ cup Low sodium chicken broth
  • ¼ cup Honey
  • 2 tablespoons Cornstarch
  • 1 Large lemon
  • Salt
  • Pepper
  • Olive oil
  • ¼ teaspoon Ground ginger
  • ½ teaspoon Red pepper flakes
  • Sliced green onions
  • Sesame seeds

Instructions

  1. Toss 1 ½ pounds of chicken pieces with 3 tablespoons soy sauce, 2 tablespoons rice wine vinegar, salt, and pepper. Allow the chicken to absorb the marinade for 15-20 minutes at room temperature.
  2. Whisk ¾ cup chicken broth with 1 lemon’s zest and juice, ¼ cup honey, 2 tablespoons cornstarch, ¼ teaspoon ground ginger, ½ teaspoon red pepper flakes, and 1 minced garlic clove until smooth and well combined.
  3. Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 425°F. Add marinated chicken and sear for 4-5 minutes, stirring occasionally to brown all sides.
  4. Introduce 12 ounces of trimmed green beans to the skillet. Stir and cook for 2-3 minutes until beans start to soften slightly.
  5. Pour the prepared honey-lemon sauce over the chicken and green beans. Reduce heat to medium and simmer for 3-4 minutes until the sauce thickens and coats your ingredients completely.
  6. Remove from heat and let the dish rest for 1-2 minutes. Your sauce will continue to set during this time.
  7. Sprinkle with sliced green onions and sesame seeds if desired. Serve immediately over steamed rice or noodles.

Notes

  • Check your chicken pieces are roughly similar in size so they cook evenly without some chunks burning while others remain undercooked.
  • Let the marinade work its magic for the full 20 minutes to help tenderize and infuse deep flavor into the meat.
