Instructions
- Toss 1 ½ pounds of chicken pieces with 3 tablespoons soy sauce, 2 tablespoons rice wine vinegar, salt, and pepper. Allow the chicken to absorb the marinade for 15-20 minutes at room temperature.
- Whisk ¾ cup chicken broth with 1 lemon’s zest and juice, ¼ cup honey, 2 tablespoons cornstarch, ¼ teaspoon ground ginger, ½ teaspoon red pepper flakes, and 1 minced garlic clove until smooth and well combined.
- Heat 2 tablespoons olive oil in a large skillet over medium-high heat at 425°F. Add marinated chicken and sear for 4-5 minutes, stirring occasionally to brown all sides.
- Introduce 12 ounces of trimmed green beans to the skillet. Stir and cook for 2-3 minutes until beans start to soften slightly.
- Pour the prepared honey-lemon sauce over the chicken and green beans. Reduce heat to medium and simmer for 3-4 minutes until the sauce thickens and coats your ingredients completely.
- Remove from heat and let the dish rest for 1-2 minutes. Your sauce will continue to set during this time.
- Sprinkle with sliced green onions and sesame seeds if desired. Serve immediately over steamed rice or noodles.
