Ingredients
Scale
Protein:
- ½ pound shaved steak
- 4 eggs, beaten
- 2 slices American cheese
Vegetables and Aromatics:
- 1 small onion, sliced
Seasonings and Condiments:
- 1 teaspoon Montreal steak seasoning
- 1 tablespoon Worcestershire sauce
- ½ teaspoon salt
- ½ cup mayonnaise
- 2 tablespoons mustard
- ¼ teaspoon dried dill
- 3 tablespoons unsalted butter
- 1 bagel, split and toasted
Instructions
- Melt 1 tablespoon butter in a skillet over medium-high heat at 350°F. Add sliced onions and cook for 3-4 minutes until softened and lightly caramelized.
- Remove onions from skillet and set aside. In the same skillet, melt another tablespoon of butter.
- Add ½ pound shaved steak to the skillet. Sprinkle 1 teaspoon Montreal steak seasoning over the meat. Cook for 2-3 minutes, stirring frequently, until steak is browned and cooked through.
- Push steak to one side of the skillet. Add 1 tablespoon butter to the empty side.
- Pour 4 beaten eggs into the buttered area. Use a spatula to scramble eggs for 2 minutes until just set and slightly creamy.
- Mix mayonnaise, mustard, and dried dill in a small bowl to create a quick sauce.
- Split and toast the bagel until golden brown and crisp on the edges.
- Layer the sandwich by spreading sauce on both bagel halves. Add cooked steak first, then scrambled eggs.
- Top eggs with 2 slices of American cheese. Let cheese slightly melt from residual heat.
- Add caramelized onions on top of the cheese. Close the sandwich with the second bagel half.
- Cut sandwich diagonally and serve immediately while warm and fresh.
Notes
- Toast the bagel carefully to avoid burning, ensuring a golden-brown color and crisp edges for maximum texture.
- Season the steak with salt and pepper just before cooking to enhance its natural flavor and create a delicious crust.
- Scramble eggs on low heat, gently folding them to create soft, creamy curds that won’t become dry or rubbery.
- For a gluten-free version, swap the bagel for a gluten-free alternative or use a lettuce wrap to keep the sandwich low-carb.
