Instructions

  1. Mix 1 tablespoon garlic paste, ½ teaspoon oregano, ½ teaspoon Italian seasoning, salt, and pepper in a bowl. Coat 6 chicken thighs thoroughly with the seasoning mixture.
  2. Heat 2 tablespoons olive oil in a large skillet over medium heat (375°F). Add chicken thighs and cook 5-6 minutes until golden brown on first side.
  3. Flip chicken thighs and cook additional 5 minutes until both sides are evenly browned. Remove chicken from skillet and set aside.
  4. Add finely diced onion and 2 minced garlic cloves to the same skillet. Sauté for 3 minutes, stirring constantly until onions become translucent.
  5. Reduce heat to medium-low and add 1 thinly sliced lemon and ¼ cup white wine. Scrape pan to release browned bits for 3 minutes.
  6. Pour 1 cup chicken broth into skillet and return chicken thighs to pan. Bring liquid to a boil, then reduce heat and simmer for 5 minutes.
  7. Add 1 cup marinated olives to skillet. Continue simmering for 10 minutes until chicken is completely cooked through.
  8. Remove skillet from heat. Let chicken rest 5-7 minutes so liquid slightly reduces but remains slightly saucy.
  9. Transfer chicken to serving plate. Spoon olives and pan sauce generously over the chicken before serving.
