Instructions

  1. Spread ½ cup flour across a shallow dish. Season two 4-ounce chicken breasts with salt and pepper. Thoroughly coat each chicken piece in flour, tapping off any excess.
  2. Heat a 12-inch skillet over medium-high heat to 375°F. Melt 2 tablespoons butter with 1 tablespoon olive oil until butter stops foaming.
  3. Carefully place floured chicken into hot pan. Sear first side for exactly 2½ minutes until golden brown. Flip and cook additional 1 minute.
  4. Remove chicken to a clean plate. Add another tablespoon olive oil to skillet if pan looks dry.
  5. Pour ¼ cup fresh lemon juice and ½ cup chicken stock into same skillet. Sprinkle in 1½ tablespoons rinsed capers and 2 minced garlic cloves.
  6. Bring liquid mixture to rapid boil for 45 seconds, then reduce heat to medium-low.
  7. Return chicken to skillet. Simmer sauce and chicken together for 3-4 minutes until chicken reaches 165°F internal temperature.
  8. Spoon hot sauce generously over chicken. Garnish with fresh parsley and lemon slice if desired.
