Description

Whip up this Mexican Chicken and Rice in minutes for a flavor-packed dinner that’ll make your taste buds dance. Packed with zesty spices and tender chicken, this one-pot wonder brings serious comfort to your weeknight meal lineup.

Ingredients

Scale

Main Proteins:

  • 1 lb chicken breast, diced
  • 1 cup shredded cheese

Base Starches:

  • 2 cups cooked rice
  • 1 can black beans, drained
  • 1 cup corn

Supporting Seasonings and Liquids:

  • 1 cup salsa
  • 1 tablespoon olive oil
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt to taste

Instructions

  1. Warm a large skillet with 1 tbsp olive oil over medium heat for 2 minutes until surface shimmers.
  2. Drop 1 lb diced chicken breast into the hot skillet and sauté for 6-7 minutes, stirring occasionally until golden brown on all sides.
  3. Pour in 1 can drained black beans, 1 cup corn, 1 cup salsa, 1 tsp cumin, 1 tsp chili powder, and a pinch of salt. Stir ingredients thoroughly to combine.
  4. Fold 2 cups cooked rice into the skillet, mixing gently to distribute flavors evenly and heat rice through.
  5. Sprinkle 1 cup shredded cheese across the top of the mixture and cover the skillet with a lid for 2-3 minutes until cheese melts completely.
  6. Remove from heat and serve the dish immediately while hot and cheese is still gooey.

Notes

  • Add extra spice by using hot salsa or including diced jalapeños for a kick that’ll warm up your meal.
  • For a lighter version, swap white rice with cauliflower rice and use reduced-fat cheese to cut down on calories.
  • Choose dark meat chicken for more flavor, or use rotisserie chicken to save time and add rich, seasoned taste.
  • Let the dish sit for a few minutes after cooking to let the flavors meld together and create a more cohesive meal.
