Description

Brazilian pão de queijo with minced beef pairs chewy cheese bread with savory, seasoned filling. These comforting bites feel warm, rich, and wonderfully indulgent.

Ingredients

Scale

Main Ingredients:

  • 300 grams minced beef
  • 500 grams pao de queijo dough
  • 150 grams cheese

Aromatics and Seasonings:

  • 1 medium onion
  • 2 cloves garlic
  • 2 tablespoons fresh parsley
  • 1 teaspoon salt
  • ½ teaspoon pepper

Cooking Liquids:

  • 1 tablespoon olive oil

Instructions

  1. Pour 1 tablespoon olive oil into a skillet over medium heat. Sauté your chopped onion and minced garlic for 3-4 minutes until they become soft and translucent.
  2. Introduce 300 grams of minced beef to the skillet. Sprinkle 1 teaspoon salt and ½ teaspoon pepper across the meat. Cook for 5-7 minutes, stirring occasionally, until the beef browns completely.
  3. Remove the beef mixture from heat. Fold in 2 tablespoons fresh chopped parsley. Allow the mixture to cool down to room temperature.
  4. Incorporate 150 grams grated cheese into your cooled beef mixture. Stir thoroughly to distribute the cheese evenly throughout the filling.
  5. Take a small portion of your pao de queijo dough and gently flatten it with your palm. Create a small well in the center.
  6. Scoop approximately 1 tablespoon of the beef and cheese filling into the dough’s center. Carefully fold and pinch the edges to form a sealed ball.
  7. Arrange the filled dough balls on a clean baking sheet, ensuring they are spaced 1-2 inches apart.
  8. Slide the baking sheet into a preheated oven at 200°C (400°F). Bake for 15-20 minutes until the surfaces turn a rich golden brown color.

Notes

  • Always let the beef mixture cool completely before adding cheese to prevent melting and ensure a stable filling.
  • Use fresh parsley for a bright, herbal note that complements the rich beef and cheese flavors.
  • When forming balls, keep hands slightly damp to prevent dough from sticking and create smooth, even surfaces.
  • For a leaner version, substitute ground turkey or plant-based ground meat to make the recipe more diet-friendly.
